The maturity gained by chef Renato Favaro has most certainly rubbed off on his cuisine, inspiring him to rediscover the taste of the "cucina de la Nonna" and to put together dishes evocative of Lombardy, his native region. A 'simple' Lasagne à la Bolognese - though let's face it, there's lasagne and Lasagne – therefore rubs shoulders with a more contemporary shellfish ravioli with spinach shoots and Aomori black garlic that leaves the door open to discovery. The final impression is that of a generous family cuisine where the love of the product is reflected in the plate.
