Julien Lucas' plant-based style of cooking is very much reflected in the plates, such as the tomato tartar and its marigold-scented water, all topped with a tomato sorbet; a dish bursting with freshness. The vegetable ravioli come in three variations, each hitting the right note, whether, carrot and coriander, golden apple and spinach or celery and roasted peanuts; a Jerusalem artichoke, beetroot and vegetable jus binds the whole together, giving a wintery foretaste. The concept of the cheese trolley with a single exceptional product works perfectly, the handsome piece served with a very original "lollipop" of herb salad. An elegant service in an atypical but charming and comfortable setting completes the experience.
