The small brasserie next door to the Distillery, which shares the kitchen of gastro-botanical chef René Mathieu, still takes the liberty of making an exception from the all-vegetable rule with a fauna and flora menu fit to satisfy animal protein die-hards. That being said, the plant kingdom still rules supreme in the chef’s dishes, treated with the same reverence as in the restaurant next door. From Sandrine's “toffee tomatoes” with pollen, flower and caramel to the vegetarian beetroot, cucumber, allium root and immortelle oil tartare, the Druid of Bourglinster once again takes diners on a journey into his secret gardens planted with incomparable floral and herbaceous flavours. The attractive terrace also keeps you in touch with the surrounding nature.
