When Christian Ewen gets out his pans, the result is a string of appetizing dishes that come together to create his menus. Just take his Mediterranean terrine, a bold marriage between a fish soup and a ratatouille topped with a langoustine jelly; simply luscious! The lamb dish takes on Northern African notes with its couscous, ras el hanout and delicious braised carrots, transporting us to the other side of the Med. The result is an eclectic yet effective mix of styles served elegantly in a medieval setting.
