With chef Yann Castano at the helm, you can expect to eat well, and you won't be disappointed. We enjoyed a perfectly cooked medium-rare tuna with a thin golden crust that gave way to tender, pearly flesh. The vinaigrette, subtly balanced between the spiciness of ginger, the roundness of peanuts and the tangy freshness of mango, adds zest, a touch of sweetness and just the right amount of exotic flavour. The breathtaking view of the city adds to the pleasure of the moment.
