The freshness of the lemon and cucumber, the sweetness of the agave syrup and the creaminess of the egg white are dosed to take off the spicy edge of the bird's eye chilli, as long as you order it "lightly spiced"! It blows out the cobwebs, but it’s well worth the experience. Pisco and, for the less adventurous, rum in all its splendour, also form the basis of these drinks that smack of Amerindian scents.
