Chef Giuseppe Molinaro surprises us with transalpine-inspired dishes without stuffing us with pasta. Although he likes to play around with rock and film references, he also has a lot of fun with the composition of his dishes, such as the poultry neck stuffed with foie gras, which is treated like offal, the epitome of power and elegance. The ravioli del plin a la Genovese continued to treat us to fine and powerful flavours.
