Things are moving for René Mathieu and the Distillery becomes Fields by René Mathieu from January 15, 2025. The "druid" leaves the Château for more modernity and a promise of evolution in a new setting, that of the former hunting lodge of the grand-ducal family. For our part, we are delighted to find the chef in his new setting and will tell you more in our next edition on October 27, 2025.

A gastronomic experience is what you’re promised and that is just what you’ll get. It begins with an aromatised water to bring your taste buds to attention, while a towel with carefully studied plant fragrances rids your hands of any parasitic odours. A flaxseed cracker and plantain pesto take over, followed by a crunchy, creamy and powerful concert of savours. The burnt-wood crisp, the vegetable ravioli with vegan cheese and mushroom-free mushroom cream or the chickpea water emulsion are just a few examples of what awaits you. La Distillerie lays no claim to being a vegetarian restaurant, but a temple dedicated to plants, and that's where the difference lies. Its philosophy is to do justice to the flavours bountiful nature has to offer. An asparagus and rhubarb combo followed, shattering all our reference points and taking us into hitherto unexplored realms of emotion, while the finale with its violets and strawberry coulis is certain to linger long in our memories. It would be a pity to put an experience that left us speechless into words, and so we invite you to enjoy your own in the hands of this Knight of the Order of Leopold, René Mathieu.
