From his cold spaghetti with sea urchin to his mouth-watering gravlax with mandarin and a perfect vitello tonnato tradizione, that transalpine passion is palpable. As for the fine gamberro rosso carpaccio, it is accompanied by a risotto with powerful, crunchy head juices, just sensational. Special mention goes to the service of Chiara Putrino front of house, who selects her wines with a rare discernment! The same goes for everything else, which is why the title of Discovery of the Year 2025 is richly deserved.
