Champagne importers Agnès and Sébastien Rouillaux showcase their sparkling skills through a corking selection, of bubbles, thanks in particular to their superb cast of passionate sommeliers. The plates follow, thanks to young chef Yassin Khaldoune, who masterfully executes recipes such as the grilled umami aubergine covered with a scattering of hazelnut praline and a dash of soy sauce reduction, spiced up with a blood orange jelly, one of the best veggie dishes of the year, which not only earns the address a place in our H!P selection, but also crowns the sommelier duo Olivier Chocq and Amaury Brunstein Laplace with the title of Sommeliers of the Year 2025!
